Rick is cursed with knowledge, as Thanos would put it. The problem that comes with being the smartest, is that you are also the loneliest. Rick KNOWS that none of us exist on purpose, no one means anything, in fact nothing means anything. He doesn't have a peer, or even anyone close to an equal. The closest he has had to companionship (other than Beth's mother presumably, which clearly could not have ended well) was a purely hedonistic relationship with a hive mind entity, and even that couldn't keep up with Rick.

Morty is not just the closest thing to a partner or friend that Rick has, Morty is ALL Rick has. Not infinite Mortys. THIS Morty and THIS Rick. Rick needs Morty. Like actually needs him. Underneath Rick's megalomaniacal god complex, there is a very sad, very lonely, very scared old man who's biggest fear, across the entire infinite multiverse where nothing really matters - is that he will lose the one person who actually does matter to him. what's worse, is Rick knows this is inevitable and there is nothing that he can do about it.

It's the one thing that Rick can't do. Not for "real" at least. So the only thing that he can do is to try to put off the inevitable for as long as possible, and with the knowledge and power at this disposal, that can get pretty creative.

Not only do Rick's methods keep Morty around, but they feed Rick's god complex, which is what really drives Rick in the first place. This entire episode was about Rick trying to impress Morty and refusing to accept not being able to do something. Not being able to do something is just not acceptable in Rick's mind, his entire god complex is centered around him being able to control or even create his environment and his reality. And not being able to keep Morty, not being able to fix that, is something that Rick's psyche cannot handle.

Without Morty, Rick will literally die.
